Cappadocia travel guide

Fairy chimneys, cave hotels and balloons at sunrise.

In short

Cappadocia in central Turkey is famous for its fairy-chimney rock formations, cave churches of the Göreme Open-Air Museum, underground cities and sunrise hot-air balloon flights. Stay in a cave hotel in Göreme, Uçhisar or Ürgüp. Visit from April to June or September to October and allow 2 to 3 days. It is good value, and many nationalities enter Turkey visa-free or with an e-Visa.

Cappadocia, in central Anatolia, is a region of volcanic valleys where wind and water have carved soft rock into cones and 'fairy chimneys'. People have lived in the rock for millennia, creating cave dwellings, underground cities such as Derinkuyu and Kaymaklı, and Byzantine churches with frescoes, many protected in Göreme National Park, a UNESCO World Heritage Site.

Cappadocia weather by month (Nevşehir)

Cappadocia sits on a high, dry plateau: summers are hot by day and cool at dawn, and winters bring snow and frosts near -4°C. Monthly figures are 1991–2020 normals from the Nevşehir station.

Cold seasonBest timeHot season
Bar: average low to high temperatureRainfall
Apr to Jun, Sep to OctBalloon flights, Rose Valley, GöremeMild hiking weather.
Dec to FebSnowy valleys, underground citiesCold, quiet and scenic.

Göreme, Uçhisar or Ürgüp, and two to three days in Cappadocia

Plan two to three days in Cappadocia. Göreme is the most practical base, with most balloon operators, the Göreme Open-Air Museum and valley trailheads close by. Uçhisar is quieter, Ürgüp has more restaurants, and Mustafapaşa suits travellers who want calm. Book the balloon and a cave hotel as soon as your dates are set.

The region is a cluster of villages with no single centre. From Göreme the open-air museum is a short walk east, Uçhisar sits under its carved rock castle, and Mustafapaşa's Greek cave mansions mostly date from the 1800s.

  • Two days: balloon at dawn, the Göreme Open-Air Museum, then a sunset walk in Rose Valley. The second day goes underground at Kaymaklı or Derinkuyu and finishes at Uçhisar castle.
  • Three days: keep the third morning free as a second balloon chance, and spend the day in Ihlara Valley, a canyon 15 km long with around 50 rock-cut churches.
  • Four or five days: add the pottery town of Avanos on the Kızılırmak river, the long walk from Uçhisar through Pigeon Valley, and a slow afternoon in Mustafapaşa or Soğanlı.

Spring and autumn cave hotel rooms go first. Mobility matters here too: cave rooms often involve steps and rough paths, and a standard modern hotel is the safer bet for anyone who struggles with them.

Hotels and agencies run shuttles timed to the flights from Istanbul, and a hire car suits sunrise viewpoints and remote churches.

Booking a sunrise balloon flight and planning for wind cancellations

Cappadocia's hot-air balloons take off at sunrise and fly for about an hour, with around 20 passengers in each basket. Over 20 licensed agencies sell seats, most of them in Göreme. Strong wind cancels flights, more often in winter, so stay at least two nights and book the first possible morning.

Sunrise is chosen because the winds are lightest then. Check the operator's licence, and expect a hotel pick-up well before dawn and a van ride to the launch field.

Booking the first possible morning leaves a second chance if wind grounds the flight. Ask the agency how it handles a cancelled flight before you pay.

Staying on the ground is no great loss. Walk up to a viewpoint on the ridges around Göreme before sunrise and watch the envelopes inflate and drift over the valleys. A bright sky matters more than anything: under heavy cloud the rock turns flat and grey, and the photographs with it. Bring a warm layer even in July, when dawn temperatures sit around 15°C.

September skies, kırkikindi storms and winter snow in Cappadocia

The best time to visit Cappadocia is September, with highs around 25°C and barely 14 mm of rain, followed by April to June and October. Winter brings snow, January lows near -4°C and more cancelled balloon flights.

The steady September skies suit flying and walking alike. April to June is also good (16 to 26°C), though spring brings the sudden inland thunderstorms called kırkikindi, so carry a waterproof on long hikes.

In July and August, walk early, then spend the hot hours in the underground cities, where the air stays cool. The region is at its busiest in these months.

October (19°C) is a lovely, quieter shoulder month with clear light. After that, temperatures fall fast: November nights drop to about 2°C.

Winter is serious here. Fairy chimneys dusted in white make the best photographs of the year, yet more balloon flights are cancelled and short days cut the sightseeing. Pack for real cold if you come between December and March.

Testi kebab from Avanos clay jugs, and Cappadocia's red wines

Cappadocia's signature dish is testi kebab, meat and vegetables slow-cooked in a sealed clay jug and cracked open at the table; order it ahead in Göreme. The jugs come from the pottery town of Avanos, and the local wines are mostly red. Village life is conservative, so dress modestly away from the hotels.

Testi kebab takes about an hour to cook, so many Göreme restaurants want an order in advance. In Ürgüp, be wary of places that make the pots days ahead and reheat them.

Avanos, whose potters work the silt of the Red River, is where the jugs come from. Workshops such as Chez Galip let you throw your own mug, though some pottery "museums" are simply shops in disguise.

This is wine country, and the local bottles are mostly red. Taste at the Turasan winery shop in Ürgüp or in the wine houses on Edip Akbayram Street in Avanos. Cave hotels serve long breakfasts on their terraces, a good reason not to book a tour that leaves too early on a non-balloon day.

Village life is more conservative than on the coast. Dress modestly away from the hotels and cover shoulders and knees in mosques. Ask before photographing people at work in the fields or at their doors. Carpet and kilim sellers will offer tea; accepting it does not oblige you to buy. Tip around 10% in restaurants.
